Hedgis is a restaurant located in the atmospheric vestibule of Hogere burgerschool which prides itself on being organic, fresh, and seasonal. The entire menu consists of only vegetarian and vegan dishes and changes with the seasons.
Why sustainable?
Hedhis has dedicated itself to buying from local suppliers only and thereby helps to reduce the environmental damage done by transportation-related carbon emissions. Simultaneously, cooking seasonal food further reduces the impact winter gardens and storage facilities have on the environment and supports the local economy.
Sustainable Cities and Communities: The restaurant is located in a renovated school building which houses a number of local initiatives and companies.
Climate Action: Consuming local and seasonal food heavily reduces the individual carbon footprint and prevents the pollution associated with transportation.
Life on Land: By only selling plant-based dishes they help reduce protect tropical rainforests, which are often cut-down to be transformed into soy plantations.
